She may be watching you simply to see how you interact with other women and people in general. In effect she may be studying you. Have you chatted her up a little in an appropriate situation. "YOu know, I have noticed this about you, is it accurate?" Open up the possibility for her to provide you with an assessment.

Women like talking about people, perception, and emotion... You have an intuit awareness kind of thing... Who knows where that could go?
