So if there is a shy guy who's very mellow, not easy to talk too because he has not much to say since he's not outgoing with girls, or much less anybody, and he is not popular at all, he is kind of standoffish, it is popular to he is able to date a girl who is very popular with a group of friends, almost to the point where she is clicky with her group, and may be standoffish to other people, not necessarily the shy guy. Or are those two completely different and even a first date who not work at all. ?
Yes as long as you can manage to keep the conversation going it should actually be preferable. Opposites attract and I think it is only good in a relationship if one person likes to talk less than the other. Less competition and both are happy.

One of my friend is quiet, but not a push over if you know what I mean. Also he isn't very good looking, a little chubby too but he seems he can't shake them off.
He is also very very smart though.
Confidence!
If he's too shy to ask her out, I'd say "ain't gonna happen."

I say go for it, the differences should be nothing more than conversation starters.
