Why would my student stalk me on Instagram?

What did he/she say? Maybe they stumbled upon your account. Maybe they purposely tried to find you. Maybe... well you get it. Could be any number of reasons. This is also why I keep my account private to friends and family only. I don't allow random people. You should do the same because any interaction with students should be kept to in school and not on social media. That is just asking for trouble. The amount of articles I see these days with teachers getting in trouble because of their social media accounts are too many. I am not suggesting that you can't have social media. I am just saying be smart about it and only allow those that should be accessing it to do so.

good rule of thumb for teachers: don't follow students or let students follow you until they graduate. Too much can go wrong.
