Everybody likes to eat the foods that they want and that is great! However, we have to be realistic when it comes to what we do to our bodies! This is merely a guide so you can live an easier, less painful life with an abundance of energy! Now I'm sure you already understand how important the polyunsaturated fat content in foods is to be really considered. There needs to be an abundance of omega 3's epa and dha fatty acids that outweighs the omega 6's. The more omega 3's you consist of, the more natural your diet is. As having excessive omega 6's make these fats that build up your cell walls go rancid causing systematic inflammation. The ratio among these fatty acids in grains is way out of proportion. There is simple carbs, and complex carbs, of course complex meaning it will take longer and more effort for your body to burn. There is something called saccharides, which is all the different bonds of carbs. There is monosaccharides( one bonded carbs), disaccharides( two bonded carbs), oligosaccharides( three bonded carbs), and polysaccharides(4-18 different bonds of carbs). Now depending on the molecular carb bond depends if it is a simple or complex, usually monosaccharides are just one bond making the most simplest of carbs.
Monosaccharides are like fructose, glucose, dextrose, etc. Also like disaccharides, like table sugar which is two bonds of fructose and glucose. Now when you have any carb with all these different bonds they determine something called the glycemic load. Which is the time it takes to burn the sugar/carb base of the food. So you have something called the glycemic index(you can google it) but it list all the foods and their glycemic loads( the lower the load, the slower it takes for your body to burn the sugar, which is ideal and what you want), and the amount of carbs the food consists of. Now most whole foods have a glycemic load anywhere up to 50. 50 being high. Grains have a glycemic load anywhere from 75-120. Usually the higher the load, the higher the carb base.
When you eat anything with a lot of carbs your blood thickens (blood pressure), your heart speeds up because thick blood is hard to pump, and your pancreas has to do more work to produce insulin to fight off that sugar, causing your heart and pancreas exhaustion. Fat is your body preferred energy source, but sugar gets burned first, so if you eat excess amount of sugar then your body has to store the fat as body fat for later use, and since grains have a lot of sugar then you are also storing that sugar as body fat in the form of glycogen. Understand this, if you are attempting to loose weight. If you eat grains, your body has to burn the sugar in your system, then it has to burn the sugar you stored as glycogen, and if you haven't had any more carbs to eat, then it starts burning the fat your body stored.
Now to jump to the anti nutrients, grains have this substance called phytic acid. This acid binds to the minerals you eat and prevents your body from absorbing these minerals. Digestion is not absorption! You want mineral dense bones, that is ideal for health. There is a reason why a lot of people have osteoporosis! There is this sugary protein called Lectins, what this protein does is it sticks like glue to your lower intestine, and damages the intestinal lining to your colon, causing a gap to form and allowing fecal matter to leak into your colon( I know gross, a leaky gut!).
The amount of fiber that exists in grains is also way to high, causing the stretching, scratching, and rupturing of your bowels as this indigestible fiber moves along your tract. Of course the amount of fiber does not allow you to absorb any of the minerals the staple offers. Now most people have their facts wrong on cholesterol. Your cholesterol levels have nothing to do with the amount of cholesterol you consume. The cholesterol you eat just gets absorbed and digested and it is nourishing and healthy for you. Your body cholesterol levels is created by your own body, and the release of cholesterol is to repair internal damage.
From all the damage you have done to your intestine and colon, ldl lipids carry cholesterol to its destination to repair the internal damage, but you also release cortisol that increases a lot of damage. Uric acid is also damaging and could create a gout(type of arthritis), Lack of secretion from Uric Acid comes from your liver being filled up with fructose. Which grains is also high in! Avoid all grains. Wheat, barley, rye, oats, corn, etc. Legumes have the same content. Peanuts, soybeans, black beans, kidney beans, anything beans, chick peas, lentils, etc. I know this was a lot of information, but it is well worth reading and learning! There is a reason why there is a lot zombies walking in America, grains is a major factor! The inflammation is to an extent where you are frying your brain, and weakening your muscles, the amount of phytic acid steal minerals from your bones, the amount of lectins destroys your gut, the fiber takes a number on your intestines, you release more cortisol completely deregulating your whole hormonal output. It's not just gluten, sprouted or unsprouted, modified or not, all grains are bad for you!
