I don't necessarily have specific recipes for being a flexitarian, but it's pretty easy to replace meat products in normal dishes with things like tofu, seitan, tempeh, etc. The companies gardein, morningstar, and Amy's typically make good imitation meat and some frozen vegetarian dishes as well that are already prepared for you but also pretty healthy. As for exercise, how your body responds to exercise determines if your period comes late or not. There aren't specific exercises that make your period come late or don't make it come late, that's not how it works. So if you want to exercise, you might just have to deal with your body needing an adjustment time when your period comes late for a month or two, there's nothing wrong with it. Pick some exercises you enjoy and do them. Don't waste your time and energy trying to create some formula to find out what exercise will make your period late and what won't.
