1. Fat doesn't turn into muscle. You lost fat making the muscle more visible.
2. Fat loss is the result of turning fat into energy, not muscle. If fat turned into muscle you'd actually gain weight because muscle is more dense than fat.
Fat isn't as dense as muscle so you can lose a lot without it seeming like a large weight loss on the scale. This is what 5 lbs of fat looks like for example.

3. Sugar is a major culprit in making you fat because it raises your insulin which stores the sugar in the fat cell. Try eating peanuts or anything else. It might be hard at first but you'll just have to tough it out.

Muscle weighs a lot more than fat. So you can lose a lot of fat and gain a little muscle ads your weight don't change much. As far as sugar goes, it's just pretty much always bad.
