I think pasta could be an easy one. You could even get her to help or supervise, or even teach you to cook something if you like.
Just fill a pot about 2/3-3/4 the way with water, big enough to fit as much pasta as you're going to need. Remember that the dry pasta is going to expand quite a bit so if you fill a bowl with dry pasta, that's going to be overflowing when it's cooked.
Put the lid on the pot, and turn it on, some where about 5 if the scale is out of 8. Once the water is boiling (I.E. bubbling and roiling profusely) carefully pour the dry pasta in. Now, while the pasta cooks, you may need to adjust the heat on the element underneath, so the pot isn't boiling over every thirty seconds. Then you just wait. check the box if you like, as certain quick-cook pastas only take twenty minutes or so, but other regular pasta may take half an hour or more.
Be sure to heat up some sauce in another, smaller pot, or I use a skillet or frying pan sometimes. You can buy some in the stores pre-mixed.
But yeah, for all of this, I think you could easily ask your Girlfriend for some help or thoughts or even get her to help you make it, as in make it together.

i think that a hummus with pita chips would be a good start... Maybe make a stirfry? It's hard to screw that up unless you forget that you're cooking and it catches on fire. Lasagna isn't terribly hard if you find a recipe for it. Grilled chicken with a sauce can be pretty easy.
