If you're trying to be a bit healthier this Christmas, here are some of my "go-to" recipes over the holidays.
1) Eggnog

Recipe:
2 cups Almond milk
1 Tablespoon vanilla
1/3 cup sugar or sugar substitute
1/4 tsp xantham gum
1 T freshly grated nutmeg
Cinnamon to taste
spiced rum (dark) to taste
Blend it in a blender so the Xantham gum can make it thick
2) Peanut Butter Chocolate Fudge

Recipe:
1/2 cup coconut oil
1/2 cup peanut butter
1/2 cup + 2 tbsp cocoa powder
1 tsp vanilla extract
salt to taste
1/3 cup + 2 tsp maple syrup
Melt the coconut oil and add in the dry ingredients. After it's smooth, add in the peanut butter. Put it in the fridge or freezer to solidify.
3) Reeses trees/buckeyes/whatever

Recipe:
Chocolate Layer:
1/4 cup Unsweetened almond milk (or skim milk)
1/4 cup Plain low fat Greek yogurt
1/4 cup Cocoa powder (unsweetened)
2 tbs Protein powder (or additional cocoa powder)
1 tbs Baking stevia (or 2 tbs sweetener of choice)
Peanut Butter Layer:
1/4 cup pb2
1/4 cup +1 tbs Water
1/2 tbs Baking stevia
Make each separately. Spray muffin tin with cooking spray. First spread chocolate layer, then peanut butter, than chocolate again. Put in fridge/freezer until solidifies.
4) Chocolate-Chip Cookies

Recipe:
2 tsp vanilla extract
3 T egg whites
4 tablespoons dark brown sugar, lightly packed
1/2 cup coconut oil
1 and 1/2 cups oat flour (regular oats blended)
1/2 tsp baking soda
1 tsp cinnamon
Pinch of salt
1/2 cup dark chocolate chips
5) Pinecone Trees
