Nobody hates on Christians celebrating Christmas. You're free to celebrate it if you so desire. If however you're meaning why in a place of business they don't really say merry Christmas as much (which in my interactions has been where many feel that oh it's under attack cause they no longer do this whereas before they used to) is simply cause you don't know if the other person celebrates it or not. In that sense it's simpler to just say happy holidays. As I don't know whether random person x celebrates Christmas or hannukah or some other holiday I'm just gonna say happy holidays. It also covers new years if I don't see the person before then

As the world is more diverse you're less likely to be greeted upon a set holiday vs just a generalization. Business is there to make money, the less people you offend the more clients you're more likely to have. As such even if it'll offend one person who will look at me and go "I don't celebrate that holiday I celebrate this and why do you only specify that and not mine" I won't wish any specific one. I'll give a generalization because that's just better for my bottom line cause even 1 client less is 1 less person where I have a chance to make profit.

Never met anyone in real life telling me Christmas is offensive or smt... but if did the solution is simple, just say out loud "what? You hate Christmas? They only pick on people that they know will "give them the other cheek" or won't fight back. Not all Christians are docile though. Some of them are very vocal in defending their religion.
