so far I have spent 15-20 Euro per person per gift and occasion, Christmas and birthday.
How much do you spend in America? Analog $20 for a birthday gift or a Christmas present, for example?
I like to give away nice things that aren't completely pointless. What are Americans into? What are typical gifts that are often given to friends, so that I get an idea of what is given away.
Currently, I am already collecting first ideas for birthdays to Christmas. I would like to give away a book. Watership Down. Is a book an appropriate gift or is such a thing rarely given in America?

Choose the gift, not a dollar or Euro amount.
And, yes, that book is a good choice. Not for everyone though.

It's already 11:30 p. m. here. Okay, with the man I know that he would like to read more when he finds time. Otherwise, I have no idea what to give as a gift. On his birthday we didn't know each other for long, so I just got a little something. Chocolate and four small bottles of Coke 0.2 liters. He can drink them when he likes and it is not too much at once. A drinking bottle but I had that from my work, so he can always think of me when he is out or at work. But he doesn't use it. It kind of sits with him as a dust collector. That's why it's important for me to know what people give as gifts in America.
People in America give books and alcohol as popular gifts. Often tickets to sports events are popular as well.

It is actualy a little bit hard for me. I really really... want to build a future with this man. But it is completely unclear if I have a chance. So I just want to behave like a "normal" woman - not to be greedy or the opposite. Balanced. How I would treat a German man.
I live in Germany and he will be retired this year. I don't know if he will return to the States (how you mean America). And I try not to do anything wrong. So I try to inform myself about how to behave with American people.
He will recognize the gift as special coming from you.
