I have honestly never heard of that cheese, but I guess I don't really eat cheese much so that explains it. I know american, yellow, and swiss haha that's it.

It's about the only time I've ever even talked about cheese before. That or reading what type of cheese is on a pizza.
Well, on American pizza, or generally non-Italian / not original pizza, there is usually just some standard cheese (for instance, Gouda...). But on original pizza there's usually Mozarella.

Though I've also had buffalo Mozzarella as well because my friend is this high quality pizza "chef" and insisted. I can't remember the last time I had any type of fast food type pizza. I always go to little mom and pop pizzerias
Exactly. I had a pizza place right near me for a while, they were from brooklyn, half of them spoke nothing but Italian. It was the best damn pizza I ever had, period. Even when I went TO New York, some how the pizza was even better than them. But then they decide to move back to New York and I haven't had pizza like that since. My friend makes neapolitan specialty pizzas. They are very good, but you can't really compare them to that small time traditional pizza shop pizza. They are just two different beasts entirely.
It is REALLY good, but it's also different. To me, they aren't even comparable because they are just so different. When I'm in the mood for Neapolitan pizza, I'm not in the mood for that traditional mom and pop shop stuff and visa versa. My friend works at a place that actually imported the wood burning oven FROM Naples. It costed SO much, but it gives such a distinct taste, it is wonderful.
