If they are single, they have likely experienced a lot of breakups, being played, and possibly a messy divorce. Also looks are highly valued in women so at that age they might be noticing a decrease in interest from men and will face more competition from younger girls.

Some people - men and women - are that ay at any age, but I don't think that middle aged women have exclusive rights on bitterness. Have you read any of the MGTOW posts?
