The oldest person we know of was born in 1904, and the last living person we know of who was born in the 1700s died in 1903 but there could be people we don’t know of.

Even if the lifespan of someone who was alive in the early 20th century managed to overlap with that of someone who was born in the 18t century, the chances of them having ever met each other are astronomically small to the point of being absolutely zero for all practical purposes.
Someone born in 1904 could have met an extremely aged person who was born in 1799 but would they remember it?
You have a miscalculation my friend, a person born in the 18th century, even if it dies at 100 years, it dies at the beginning of the 19th century, on the other hand a person born in 1800 could very well have died at the beginning of the 20th

Not likely. They may have been alive at the same time. But for them to have actually met one another is almost a statistical impossibility.
They both would have had to live to be 112. How many people in the world are 112? Not many.
Marginally possible. Someone born in late 1799 who live 111 years and a few months could have met a baby born in early 1911, and that baby could still be alive.
They would have to be immortal. I doubt they feel the need to reveal that detail.
