I’ve known this guy just over 2 weeks. The week before he was already mentioning he wanted to give me his old Apple Watch to use. He was quite persistent on it, considering I never asked for it.
He was waiting for some new straps to come in for me. He set the Watch up for me last night.
I’ve had a couple stalkers in my life, and I am taking into consideration that I may just be paranoid because of my past. He also went online and bought me a charger as well last night since I don’t have one.
When he was setting it up for me, I could see he had to put in his Apple ID and password in. I never did, but my phone did say it is connected to my Apple ID. I guess it must’ve did it automatically when they’re syncing right next to each other.
I did call Apple and we could see that everything is linked to my stuff.
He did mention that he wanted to work for Apple since he’s pretty tech savvy. So he definitely knows Apple products more than I would.
I’m wondering is there anything else I’m missing to check? Is there anyway he can track where I’m going or see my text messages as well?
We’re super into each other, it just seemed a bit too soon (to me) to be given an Apple product to use. They’re quite pricey, I appreciate that he trusts me with it. I just want to be sure.

That feels like a love bomb to me. But that isn’t really your question. Feels way too fast and quick to me. But that isn’t your question so I won’t focus on that.
On to your question. If you search for “Unpair and erase your Apple Watch” on Google, there is an Apple Support page. I’d do that and erase it again.
If you erase it you should be safe as far as I’m aware.
The only other thing would be if you added him as a friend to the “Find My” app. Which I doubt you did. If you did tho he can see your location. But you can open that on your iPhone.
Nothing in our world is 100% risk free. So I can’t guarantee you that you’ll be safe if you do those things. But those few steps should limit your risk a lot.
You could also walk into an Apple Store, and they can verify it better. Which I’d also recommend doing if you live near an Apple Store.

Umm what? If it’s wiped and only linked to your Apple ID, you can’t stalk someone else’s watch unless they give you explicit approval.
