This is so perfect if you're craving dessert or something sweet after dinner, it's quick and easy, and little to no mess either. I've made this a few times, and it's delicious!
3 tbsp peanut butter (I reckon it works even better with the nutty ones, but either is fine)
1 tbsp and a pinch of granulated white sugar
1 large egg
Whisk all ingredients into an oversized mug until batter is smooth and egg is fully whisked in. Microwave for about 1 minute (I did mine for 1:10 and it was perfect). Also, keep your eye on the mug in the microwave in case it does overflow, in which you just stop the microwave for a few seconds, let the batter sink back down, and then let it continue cooking.
Let cake cool a few minutes before eating.
I've done this a few times now, and I can recommend a few topping options:
- Whipped cream and more chopped nuts
- Chocolate sauce
- Ice cream
Or alternatively.... you can have all of them ;P
