It really depends on what kind of rice and brand you have...
some rice doesn't need a lot of water like white "Minute Rice" thats in a box because they easily get soft...
some rice like mixed black/purple, brown, glutinous or wild rice might need more water as the grain is naturally hard and takes more heat and water to get soft..
For your rice, if it turns like pudding, I believe you need to lessen the ratio of water next time.. are you using rice cooker? Because the timing of heat is important too..
I'm always cooking white or jasmine rice and the ratio of water to rice I do is 1:1 without adding anything..

Ok so basically do this:
-1 cup of rice to 2 cups of water
-chuck the rice in the pot
-wash the rice with water (use your hands in a circular motion) and drain the water (do this 3 times)
-4th time put two cups of water to your 1 cup of rice. (Use your fingers to level the rice out flat in the pot)
-chuck on the stove to high heat (wait till it reaches boiling point) and then chuck the stove to low (simmer) check every now and again till water evaporates..

Google is your friend (allrecipes. com/howto/how-to-cook-rice/). Basically get the proportion of rice to water correct and it's pretty hard to mess up. A friend who is a diabetic reminds of the dangers of eating too much rice, though. Good luck!

Two cups of water for every 3/4 cup of rice and not to stir it once it hits the water, and keep it covered. If you want it fluffier, rinse the grains off a few times before cooking them.
