Why do my legs get sore so quick from HIIT sprint workouts?

This is a new occurence. This is the 2nd time it happens. Also for each of these workouts, I did most of them on a near empty stomach (last meal over 2-3 hrs ago, some of them I did 30mins after drinking a protein shake with nothing else)

I do a 1-3 min stretch.
No jogging warm-up.

I then sprint for like a min.
Then walk for a min.
Then sprint for another min.

After like 2 mins, my legs started getting a tad sore in thé middle of the workout.

Is this a sign that I'm overworking myself or that I'm just out of shape and taking it too fast?
Overworking those legs.
You're out of shape and pushing it too hard.
Not enough warm up/ proper stretching
