Why can't I lose this stubborn belly fat?

I'm doing different weight training exercises.. Twists (sitting in a V) and twisting with 25lbs, crunches and bicycle crunches with 20 pound plate on my stomach, squats with 35lbs, lat pulldown, bicep curl, chest press, tricep dips and other triceps exercises with 15 and 20lbs. I also do intense cardio workout for 60min on the elliptical and I just started doing planks for 3 min.

Sometimes I do this all in one day depending on how sore I am. I've lost 60 lbs in the past year (I just started using weights in December) but I still can't seem to get rid of this stubborn belly fat! It's gone down a lot but it's really trying hard to cling on.

I eat a fairly healthy diet, wraps and salads and I don't count calories because it would turn into a disorder with me.

Should I just keep up what I'm doing or should I add anything else? I go to the gym about 5 times a week.
