Spaghetti sauce is easy and you can make a ton. We have a recipe we call stroganoff but I don't know what it really is. It's basically a pound cut up beef, a family size can of mushroom soup, a packet of brown gravy mix, and season to taste. You can eat it over egg noodles or even by itself and it's obviously super easy to double. This makes a TON of food allrecipes.com/.../unstuffed-cabbage-roll and tastes wonderful alone or over rice. This is an amazing potato soup recipe allrecipes.com/.../delicious-ham-and-potato-soup
Basically anything you can cook in a crock pot or in a sauce will be really easy to cook and then reheat. Buzzfeed has a lot of good recipes and you can also look though allrecipes. com for inspiration.

Lasagna is great to prepare in bulk a keep in the freezer. Oh, and this might not be a great "post workout" thing, but refrigerator rolls are terrific! You make the dough, let it rise for 8 hours, and it will keep for about a week. Whenever you want a hot roll, you just scoop a little dough out and put it in a greased muffin tin. It'll last all week. Fruit salad will also keep about two days if you add in pineapple juice and leave out the banana until you are ready to eat. I'm hungry now lol.
Chili is pretty easy and reheats well.
Few cans of rinsed beans or lentils of various types, some browned beef, maybe some onion or garlic sauteed (do your beef/onion/garlic in the pan with a touch of olive oil, then throw the rest in), canned tomatoes, jar of tomato sauce, chili powder, maybe a few other spices.

Pretty much when I meal prep I meal prep in bulk, so I normally cook a good amount of rice on the rice cooker, I BBQ chicken and lean meats on the grill, and I'll cook some veggies too, normally make enough to last me 2-3 days
