I’ve been spending time with a girl from class. Every time I suggest we get dinner, she asks if we can do lunch. I’m trying my best to show her I’m interested in her, so is she trying to tell me that she’s not interested?

Luch is a way easier date.
Less expectations, more casual, usually a shorter date, less pressure, and if really works out you have the rest of the day to do fun stuff together, and if it doesn't work out you have the rest of the day to do fun stuff.

She's suggesting lunch because after dinner it usually means sex. She's trying to tell you She's interested as well but still have respect for herself.

Maybe she’s busy in the evening and lunch would suit her better. I don’t think the type of meal or what time you eat it determines whether she’s interested or not.
