My guy friend saw a picture of my female friend and I on a night out and was instantly smitten with her. So much so, that since they work in the same area, he told me he’s going to go there and hit on her. She doesn’t know and might think it was my idea to set her up and think I’m interfering and get upset. But I had nothing to do with this. Should I warn her, or stay out of it?
Meh, I would warn her as a courtesy, especially if she's not looking to date right now. That way she can politely let him down before he makes a fool out of himself or wastes his and her time.
Better still, why not warn said guy friend, "My friend isn't trying to date right now, you should probably back off until she is..." If nothing else, politely warn one or the other (I'd warn the guy first, but that's just me) but if he still insists on talking to her- then tell her, so she can handle it how she wants to.
I’d say stay out of it. If she asks you about it then you can say he told me he was going to ask you out and I didn’t know how you felt so I felt like I should stay out of it. Unless if he is a big walking red flag then that’s another story.
The general answer to your question in almost every situation is "stay out of it". That's the best answer for this one.

This is your friend. Why wouldn't you tell her this guy is interested in her? Is there something wrong with this guy that you SHOULD warn her about him?
