Ask her what is she doing on X date or next weekend. If her answer is positive and she says she doesn't have any plans yet ask her if she would like to grab lunch/dinner or a cup of coffee.

Personally I'd suggest coffee. Not to say you can't keep the evening free and if it goes well suggest a casual walk in the park and small bite to eat
