
How can I let a potential employer know that I have options and I’m not desperate to get hired anywhere because I already have a job?


It depends on the demands. Asking for references is understandable, and that is not an unreasonable request. It’s when we get to unpaid projects, 4 rounds of interviews, etc where it gets ridiculous.
You have to ask yourself if the job/life change is worth the trouble of the interview process. If not, you can take a risk and apply any leverage you might have. In a labor shortage, they may give in and meet you at least halfway.
Write short incomplete information. Or if you’re busy don’t reply at all
You still have to answer the question.
Usually applications have a section for previous employment, and wherever you're currently at should be the first one you list. On that section, there should be a way to mention that you are working there. If a hiring manager is doing their job, they'll see that and should bring it up in the interview since it would directly affect your potential start date.
If they are desperate - and most HR bullying dumps are - just ignore them.
It will help us all turn it into a 'garbage out, productive people in' workplace.

All of the tactics that irritate you are like in personal relationships - red flags
I will add - since you can only be dedicated to one job/employer at a time, it is not supposed to be a relationship of 'milking' that most try yo set us up for, but a relationship of trust and development, on both sides. That is how it naturally is, without the greedy leeches.

Tell them thank you for the opportunity. At this time the job is not a good fit for my planned career path.
I’ve just resolved to blocking most of them and doing the reaching out myself. I decided that if it’s something I’m interested in from the start I will do a better job at applying.
If you weren't even interested, why did you apply in the first place
it's like saying "i don't like you, but ill still flirt with you"
Do not even bring this up. If they make an offer, you can mention it while you negotiate
Thats just normal stuff employers want to know. Why is that a problem?
You don't, or else you will be find yourself unemployed.
