Personally I would say the organ, the real kind with air blown through pipes (It's sad that I would have to specify pipe organ), followed closely by its cousin the accordion. Which instruments do you all think are underrated and underappreciated these days?

The recorder. Its how we all start but we forget our roots
Drums. All anybody uses today are cheap electronic finger snaps, hand claps and electric typewriters.
Pipe organ. They’re expensive and complicated, but amazing and powerful.
A more budget friendly one is the lyre. Even Zelda/Sheik play one of those.Bass Guitar, without it all Bands would suck.
Kazoo and the spoons.
The Mellotron.
