This applies to guys and girls in exactly the same way. If you're talking with someone who is just a friend or colleague, the conversation is very calm and relaxed, because there is no fear or anxiety about saying something wrong and losing the connection with that person.
When interacting or talking with a crush, everything is totally different. Nervousness is generated by thoughts of getting it wrong and scaring the person off, excitement and arousal generated by thoughts of what you'd like to do with that person, and what you'd like them to do to you. Thoughts of that crush will almost definitely be in your mind 24/7 creating even stronger feelings of nervousness and excitement each time you interact with them. Hopefully the feelings are mutual.
