A "comal" or a similar cookware, like a griddle
a tortilla press (the image), or something that can substitute it
a frying pan.
2 cups masa
2 cups water
1 teaspoon salt (optional)
In a large bowl, stir together the masa and salt.
Add the water, and mix together well.
Turn out onto a lightly floured board and knead for 5 minutes.
Divide the dough into 1/4 cup (3 oz / 90g) portions and form them into balls.
Roll each ball into a flat round about 6 inches (10cm) in diameter and 1/8 inches (0.25cm) thick. You can also use the press to make them thinner.
Heat a griddle over medium high heat.
Place the tortillas one at a time into the dry hot griddle; cook until brown on one side, then turn and brown the other side.
Remove from the griddle and keep warm in cloth towel.
If you want to make chips
Cut the tortillas in 4, 6 or 8 pieces
Fry them in the pan with lot of oil.
Drain the excess of oil, using kitchen paper.
You can add salt if desired.
Preheat the oven at 205 ºC
Put the tortillas in a sheet pan, previously covered with oil.
Bake for 10-12 min or until light brown
You can also cover the tortillas with oil and salt.
