I came straight to this post because I saw it was poutine lol. I've never had it but I'm well acquainted with it being a Canadian favorite. I personally can't quite get into it cuz of the cheese curds lol, but I'm glad you love it.
I'm American, so you already know all our crazy and cliche foods.

From Wales. The national dish is cawl, a simple lamb and veg soup is widely eaten (mostly because it's cheap). Quality varies a lot, the worst is like dish water and gristle and often found in school dinners. The best is several days old and stuck to the bottom of the pan
We harvest huge numbers of cockles which although we eat mixed with seaweed for breakfast we export the majority to other countries.
One of the few dishes that is known worldwide is the welsh rarebit, a posh cheese toasty made with beer based cheese sauce.
Faggots mash and peas is a classic and can be bought in most fish n chip shops. Googling faggot images is best not done on your work's computer
since I could not narrow my answer on Mexican cuisine culture and influence to less than 3000 words, I'll just put this picture... which shows how Mexican food is actually a amalgam of many cultures and influences... mostly Native and European ones, as well as African and Eurasian. In fact, all about us, as a country and nation has had the same development... we're the blend and the mix of things many and then it was just called México
