Why is Burrata cheese so hard to buy and costs so much?

It’s just a normal milk cheese from a cow, I could understand overcharging for goat cheese but Burrata is cow cheese and costs about 4-16 times more than other cow cheeses.

1. Each small ball is actually a two-layer cheese which has to be built-up as such. That is more labor intensive than, say, just slapping wheels of parm into a cellar to age before selling it - - - -
2. - - - and since it's a "fresh cheese", 48 hours after opening, it's pfffffftt- junk- unusable.

The creation is apparently a bit more precise and intensive

It has to be fresh and therefore has a short shelf life
Many stores don't want the cost involved at all

My boss had some for an event in the restaurant, stuff was flown in direct from Italy

It's made from buffalo milk and there's not many farms or producers. Just use mozzy cheese and cream

probably because what its made of and the ingredients in the cheese or maybe because the cheese is rare/hard to get/make
