I'm making banana bread !

Apparently the butter can be replaced with 1/2 cup mayonnaise. I never tried this, but I read it in a recipe and the author swears by it.

I was a chef, and worked in both restaurants and a bakery.

Mayonnaise is simply whipped egg and oil, so if you would eat banana bread made with eggs and oil, then there should be no problem eating that same banana bread made with mayonnaise. One could argue that mayonnaise would be even better since it is whipped/aerated there could be an enhanced flavor and/or texture.

Fun fact: "Aioli is more or less just a fancy word for mayonnaise. Restaurants often use it instead of saying "mayo", to please customers more.

I haven't tried it.

I semi-melt the butter in the microwave, then use the butter covered paper wrapping to coat the pan. I like the buttery crust. Not sure how mayo will work but maybe I'll try it sometime.

I wouldn't eat it. Mayonnaise has a very different taste compared to butter and you might not like it which would lead to a wasted batch of banana bread. If you really want to then you can go for it but I recommend making a really small batch.

Before answering this question I tried out a small experiment..

I dipped a banana in a small amount of butter and tried it out.. THEN mayonnaise and repeated..

My conclusions were they BOTH made me feel queasy, so by that logic, if you can use it with butter and make it taste nice, then you can also do it with mayonnaise!
