My mom taught me a lot, along with my (maternal) grandma and my (maternal) grandfather who was a cook in World War I !
I self-taught myself most of the rest of my "savory" cooking from America's Test Kitchen, at least until Christopher Kimball left it. ATK has a book explaining "The Science of Good Cooking", and once you learn some of the REASONS that proteins sear, sugar caramelizes, bread rises, a flour roux thickens, etc., you can apply the concepts to any number of new recipes. If you learn just these four concepts- and apply each to just five new dishes (a very, very low number), you have just added 20 new recipes to your kitchen repertoire. Once you can make a roux for example- a two-minute skill-set at most- you can make Panera-style broccoli/cheese soup, any cream soup (leek, potato, chicken, etc), cream sauce for your veggies, Country sausage and/or peppered sauce for your homemade biscuits (see recipe below), béchamel, (for your Eggs Benedict), macaroni and cheese (with almost ANY meltable cheese you prefer, not just what they through in the box), white carbonara sauce, etc.
BISCUIT RECIPE
2 cups flour
1 Tablespoon baking powder (not baking soda)
1 teaspoon table salt
1/3 cup cooking oil (I use canola, safflower, or grapeseed- not olive or soybean oil)
2/3 cup of milk (any % of milk fat- I usually have 1% unless the grandkids visit)
Pre-heat oven to 400ºF. Measure the dry ingredients into a bowl and mix them together. Add the wet ingredients. Mix them ALL together until the dough starts to pull from the bowl and form a lump. Knead dough on a floured board about a dozen times. Roll out, cut into biscuits of desired size (they will rise to twice their raw height). Bake, about 10 minutes or until desired doneness. Serve warm with Country Sausage gravy, butter and honey. Mmmm. Note: I usually use my toaster oven with the convection fan in it ON. I did the math on these- 30¢ flour, 11¢ milk, 17¢ oil, 10¢ for the pantry (salt, baking powder, flour for kneading) = 68¢ for a dozen, fresh 2" biscuits! Pillsbury MIX- which requires milk and you still have to mix) would total to $1.61 at our store: pop-open packs from Pillsbury (small packs of 5) 1.59 x 2= $3.18: Pillsbury (large pack of 8) is $2.79. I also learnt to bake 🥰 it’s fun seeing them enjoy my meals. But even though I love to cook the moment someone believes in obliged to cook for them 🥱 I lose interest. When there’s like food stuff in the house I don’t know it just excites me to cook. I’d love to be with someone who likes to cook as well or loves to eat out too☺️ But even if he can’t cook I’ll be happy to have someone who loves to help out. And eat out together I love eating out too🥰
00 ReplyYes, very well. My uncle was a cook in the Navy during WW2, he was also ornery AF. I was the only one to show interest. He always told me "This way if you marry some gal & she can't cook you won't starve". Most of those vets are dead now & as far as I know I'm the last to have that BBQ recipe. I also learned much if3 what my mother & grandmother knows as well, from scratch recipes.

+1 yI can do basic stuff. Enough to not make me look totally incapable. I don’t want a home cooked meal every night. So I like when a girl wants to cook together. But also, if we both had a hard day; it makes me smile when she looks at me and asks “wanna go get takeout?” 😂

+1 yYes.. I love to cook, the problem is though I only eat healthily so most of what I cook is for other people. Everything I make for myself is without salt, sugar or contains very little fat.
