CHOCOLATE BANANA PUDDING Ingredients 1 can sweetened, condensed milk 1½ cups water 1 large package instant vanilla pudding 8 ounces sour cream bananas, sliced Vanilla wafer cookies chocolate shell (chocolate syrup that hardens when it is cold) 1 small tub Cool Whip Directions 1. Mix water, milk, and pudding mix and chill for 5 minutes. 2. Mix sour cream, Cool Whip, pudding. 3. Place layer of vanilla wafers in bottom of dish, then bananas, then pudding mix, then chocolate syrup. 4. Repeat layers until dish is full or ingredients are depleted. 5. Keep refrigerated until ready to serve. Serves 6-8

Usually bake some chicken with good marinade on it. I would also use pineapple juice (just a little) with pineapples on top if it's a teriyaki flavor. Orange slices if it's orange chicken. Then mashed taters, mixing in cream or milk, miracle whip, butter, salt, pepper. Then a veggie side. That's my usual.

I call this one "Wag the Dog" (ox) tail stew.

Ingredients:
1 pkg ox tails
Brussels sprouts
2 medium or 1 large onion
2 large carrots
3 celery stalks
2 28oz cans of strewed tomatoes
2 beef bouillon cubes
1tbs dried rosemary
2tsp dried oregano
1tsp garlic powder
1tsp Greek seasoning
1/2tsp red pepper flakes
1/2tsp black pepper
1/2tsp salt
1/2tsp celery salt
1.5 cups red wine

Preparation:
Brown ox tails on all sides in oiled skillet
Dice onions and celery. Cut carrots to desired size
Melt bouillon cubes in 2tbs hot water.

Put all ingredients except wine and Brussels sprouts in crock pot.

Use wine to deglaze the skillet that the ox tails were browned in. Add that and the rest of the wine to the crock pot.
Add enough water (and/or more wine) to cover the contents in the crock pot

Set crock pot on high and let cook for several hours. Or set it on low and let it cook all day and night.
Turn off the crock pot and let the contents cool.
The meat will be falling off the bones. Remove the bones.

Cut Brussels sprouts in quarters and steam them.

Reheat stew in a pan and serve in a bowl over Brussels sprouts.

Puttanesca sauce

Ingredients:
2 cans of anchovies in olive oil
30 or so capers in vinegar
12 or so Kalimata olives (canned)
3.25 oz sun dried tomato & basil pesto
Several pieces of (rehydrated) sun dried tomatoes
1/2tsp or so garlic powder
1/4tsp or so black pepper
1/4tsp or so cayenne pepper
1/8 to 1/4 cup balsamic vinegar
1/8 to 1/4 cup red wine
Olive oil
Pene pasta
Fresh grated Parmesian cheese

Preparation:
Put anchovies, olives and half of the capers in food processer and blend until fairly smooth.
Heat olive oil in sauce pan and add the mixture from food processor
Add all other ingredients except wine, vinegar and cheese to sauce and simmer.
Add wine and vinegar.
Add shredded cheese last.
Stir until combined

Pour finished sauce over pasta and toss well.

I kinda wing it when I make this one. That's why I am vague about the measurements.

I'm not that crazy about anchovies and I hate olives. But this sauce doesn't end up tasting anything like anchovies or olives. I love it.

Lastly (TA DA!) Killer Shrimp

Ingredients (per serving) You have to make each serving individually:
1/2 lb medium shrimp in the shell
10tbs butter
1tsp Old Bay seasoning
1tsp coarse black pepper
1 large sprig of rosemary
2tsp fresh chopped garlic
1tbs Worcestershire sauce
1/2 cup beer. The original recipe uses Bud Light.

Preparation:
Put 2tbs butter and all other ingredients in sauce pan. Heat to a boil before adding shrimp and cover.
Cook shrimp for approx 2 min on each side. Do not over cook.

Remove shrimp and place in serving bowl. Add additional 1/2 cup of butter to sauce and heat on high until melted.
Pour over shrimp and serve, along with a basket of 1" baguette slices.

To eat, pick the shrimp out with your fingers, peal and eat. Dip baguette slices in the broth.

There is a popular restaurant that only has this one dish on its menu. It's "killer"!

Beef rolls.
1kg beef or venison in slices ( meat should be homogeneous without much fat or collagen tissue)
100g smoked bacon
2 salted pickles
2 onions
4 TBL Mustard
salt, black pepper, 5-6 allspice berries, 3 bay leaves
(Maggi seasoning sauce, Marjoram, garlic and 2-3 dried mushroom are optional)
2-3 TL potato or corn starch (for thickening of the gravy)

Tenderize meat and make thin flat slices, coat the meat with mustard on the top, put a slice pickle, onion and bacon on center. Spice it up with salt and pepper. Create a roll, use kitchen yarn to keep it tight. Roast meat rolls in a pot with clarified butter or oil, add 0,5 l hot water in the pot and remaining spices. Simmer it on low heat at least 3 hours long. Don't cook it too fast. If it's finished spice it up again with fresh spices, mix starch with 100ml cold water and add it to the gravy.

Potato mush and red beet salad fit perfectly to this dish.
