What is something you could eat everyday and never get bored?

Canned beans. I had to eat mostly canned beans one time while staying at a hurricane shelter. I grew to love them so much even cold and straight out of the can, with or without sauce.
I did a mental trick to fall in love with them. I imagined I was a Russian astronaut in a space station who had to survive eating nothing but nutrient paste:

I heard as a boy that it's some of the most bland and awful things imaginable to eat. So I created the imagination that this is all I could eat. I have a very vivid imagination so I can almost live in my entire imagination for a while this way.
Then I came back to reality in the hurricane shelter and ate the cold canned beans, and they changed from something boring and depressing to the best food I ever ate in my whole life.
Since then, I love cold canned beans even without sauce and can eat them every single day without complaint. My wife sometimes offers to heat them up and I refuse. Even though it tastes and smells better heated, I fell in love with them cold this way and build that romance.
German chocolate. I know so, because I actually eat it every day. :-)
@DryGermanGuy yum!
I could name a few things: Ice cream, pretzels, peanut butter, and whipped cream.
Rice 🍚 is life
My fiancée is from Southern China, and she grew up in a poor rural area where rice was eaten at every meal. Since she left China in 1991, she has not eaten rice. I had a box of rice already in the cupboard when she moved in with me but have since thrown it in the trash. Her go-to carb is noodles and, ironically, her favorite is rice noodles!

A chicken shawarma wrap with tabouleh, bruschetta, turnips, extra tzatziki, and a little hot sauce
OR
A burger having a beef patty, melted cheddar cheese, kale, tomato slices, crispy bacon, fried onion rings, and a few avocado slices on a brioche bun
I could have either of those every day of my life and love my life
As a old Southern boy, you could feed me fried chicken six nights a week and I'd be a might happy soul! Feed me barbecue ribs on the seventh night and I'll marry you!
Vegetables? Gotta have the greens also for health or fruits 😁
On the side
@itsclearlynicholas I try to maintain a low carb diet, so it's vegetables every day. In fact, my fiancée is Chinese and she puts seaweed in my eggs whenever she cooks breakfast.
I'm a balanced eater fussy eater myself. I eat what I like, while also knowing I do need veggies and fruits and meats and fish, not just pasta and pizza or Italian or junk foods all the time fast foods etc
@itsclearlynicholas Low carb is healthy diet for me. It keeps my cholesterol and triglycerides in the normal range, and keeps the diabetes from developing.
It's true low carb keeps triglycerides low but doesn't necessarily mean it's the way to prevent insulin resistance long term because while your cells adapt to using fat as a fuel source they also become less able to utilize glucose, thus it becomes easier to overload your system with sugar after a period of abstaining from it. Gotta keep those type 2 muscles pumped, it's nice to be buff anyway.
@IDoNotConsent I do not stay on low carb 24/7/365. I give myself a reprieve about once every two weeks.
Bagels (carbs are my friend), pizza, and peaches
I make awesome hamburgers. I buy ground sirloin at the supermarket. I have them grind it in front of me. I buy Extra large rolls at the bakery. I cook them outside and throw a couple of pieces of bacon on them. I could eat them every day
