Vinegar pickled mackerel.
Make fillets with skin, salt, flour and roast fillets in oil. Make a marinade with 2 big sliced onions, black pepper, bay leaf, allspice, 300ml water, 50ml white vinegar 10%, 3 tea spoons sugar. Optionally: juice from one pressed lime to change vinegar taste. Put the mackerel in the marinade and put the everything in glass or porcelain bowl in the fridge for 3 days.
Mackerel in tomato sauce Greek type
Make fillets, salt, flour and roast fillets in oil. Sauce: Roast 1 big finely chopped onion, 1 grated carrot, 1/4 grated celeriac in butter, add allspice, white pepper, bay leaf, little bit nutmeg, 1/4 teas spoon of sweet paprika powder, 3 fresh basil leaves or flat TS dried basil, 300-400ml passed tomatoes and 2 tea spoons sugar. Optionally: a pinch of cayenne pepper or few drops Tabasco.
Cook sauce 10-20 minutes on small flame. Put roasted fish in a flat glass or porcelain bowl pour sauce over the fish. Put everything in the fridge and wait 2-3 days.
This receipt works with cod, haddock, salmon... and other fishes as well.
Generally you have to marinade or to hot smoke mackerel. North Atlantic mackerel doesn't taste good as breaded fish fillets.
for me, the best mackerel is smoked mackerel :D

I like smoked mackerel with roasted beetroot. Also great curried.

Here they sell delicious mackerel canned salads for on bread, seems to be some kind of tomatoey sauce to put on bread.

Smoke cook it with hickory wood chips if you can
