We used to have a Mexican bakery in town that had the best conchas. Muy bueno!! Other treats too, but the conches were great. Surprisingly (since I'm typically a chocolate devotee) , the vanilla were my favorite. A little mom and pop place. I designed them a logo, and made some laminated hour signage for them, gratis. A year later, they shortened their days, and a year after that they closed. The building was turned into a Domino's, but I will never forget those conchas and their fruit empanadas, too.

I love them. We have a fabulous Mexican bakery not too far from me with wall-to-wall fresh baked goods so they're easy to get for us :-)

  with the fluffy inside, yes... the cover on a concha is much more softer than that of a croissant...
