In the UK they're either greasy dirty burger vans selling shitty burgers made with sawdust and mechanically recovered meat with a sprinkling of E. Coli. Or it's some posh twat charging £20 for avocado on toast.

Most of them were Mexican. Excellent tacos and burritos. One great one was run by Afghanis and had wonderful gyros and falafels. There was one that came once a week to a place I worked at. They had Mexican-Korean fusion. OMG, it was amazing!
Check out the movie Chef (2014). It's really good. It tells the story of a professional chef who, after a public dispute with a food critic, loses his restaurant job and starts a Cuban food truck called "El Jefe". He embarks on a cross-country road trip with his son and a friend, reconnecting with his passion for cooking and rebuilding his relationship with his family along the way. The movie features Cuban food, including the iconic Cuban sandwich, and showcases the food truck's journey from Miami to Los Angeles.
One the other hand, the only time I ever got sick was from eating at a Chili's restaurant.

I expect food trucks are just like restaurants. Some are sloppy and awful. I've seen setups that look bad from a distance, and I've never approached that food truck. The fact that they're open and mobile does seem to be a threat to cleanliness because bugs can fly in and crawl in from every spot they stop at.
But, my neighbor owns one and his kitchen is spotless. Food is good too.
But, there are restaurants that have operated for ages that have American rats for chefs (a joke about Ratatouille), are filthy and below par.All you need do is eyeball the dining room and bathrooms. Dirty there, dirty everywhere and poorly run. No need to taste the food.

I used to eat at a bigger on (like it was a bread truck at one time) and they cooked the food right there on the grill.

Before food truck became popular we have ice cream truck. I don’t like them. I have only gotten ice pops.

I once worked at a place in the middle of nowhere. It was a combinstion engineering office and factory. You'd have to drive 30 minutes just to get to someplace you could have lunch. We only had an hour for lunch so that wasn't possible. Instead, two food trucks came everyday in the parking lot, each with their own style of food. Some people brought their lunch. Most used the food trucks.
00 Reply From a business standpoint, you have to really know what you’re doing. So many rules and regulations to follow. A food truck is basically a restaurant on wheels. I had a relative and her husband attempt to start up a food truck. It ended up being a complete and total fail, due to several violations. Therefore, anyone who has a legitimate food truck, I applaud them.
