Everything changes when we age, especially our senses. Eyes need correction, ears don't hear as well, our sense of touch diminishes, our speech gets software and more raspy, our sense of smell degrades or becomes more sensitive, and yes, our taste changes. The thousands of taste buds on our tongue don't last forever.
Yes, I became anosmic ( equivalent to being blind or deaf but for the sense of smell) at 13 and I started to LOVE Cyan Pepper after I lost my nose! Some foods and beverages teased better after losing my sense of smell and some things that I used to love with smell started tasting bad.

I guess it's possible with age. There are some dishes I disliked as a kid, but I like them now.
But some things never change... things I consider disgusting, are still disgusting in my opinion (e. g offal, lard).
