It depends on the kind I'm making.
Soft-boiled eggs: cook as many slices of toast as you're making eggs, butter them and cut them up into 1" squares and dump them into a bowl. Crack open each egg and dump the contents all over the toast. The whites will have to be scraped out of the shells. Add salt, stir, add a bit more salt, eat them up, yum!!

Hard-boiled: Crack and peel them and add salt, eat them up, yum!!

Deviled: Hard-boil them, peel them, slice them in half, grate the yolks into a bowl, add mayo and salt, mix this together, scoop some into the holes in the eggs where the yolks used to be, add paprika and serve. Eat them up, yum!!

Scrambled: butter a skillet, crack the eggs and drop the contents into the skillet, add salt & pepper, scramble them as they cook, try to leave them just a BIT on the wet side (slightly uncooked) add more salt & pepper, put them on a dish, eat them up, yum!! (Some prefer to crack them into a bowl and then scramble them in the bowl and pour that into the skillet. My way, I'm saving a bowl and the time it takes to scramble them. also, an egg beater, if one is used.)

Sunny side up/dip eggs: Make a few slices of toast, one per egg should suffice, butter a skillet with the flame up full, turn it down to 3/4, crack the eggs and pour the contents into the skillet careful not to break the yolks, add salt & pepper, put a lid on and turn the flame down to 1/2 for :45, then to 1/4 for :45, then off for :45. Then take the lid off and they SHOULD be perfect! Eat all the whites, then use the toast to dip into the yolks and eat that, until there's no "liquid" yolk left. By then, you SHOULD have just enough toast left over to put what's left of the yolks onto the toast, two yolks per half-slice and eat that up, yum!! If you want to dip bacon in rather than toast, make some bacon, first but also have enough toast to put the dregs of the yolks onto. Eat them up, yum!!

Egg salad: Hard-boil them, peel them, grate them as before but WITH the whites, mix this with mayo, add salt. Spread this onto a sheet of bread and cover it with another sheet. Eat them up, yum!!
    YEAAAH!!

Now you've made me want some eggs! 😋
When I make my deviled egg salad I put a teaspoon/tablespoon of Del Monte sweet pickled relish. Only that kind.
That's how my mom used to make them. You might want to try it out. Yummy 😋

      I never eat greens
I forgot to mention, add just a light sprinkle of sugar to the Deviled eggs and maybe the egg salad.

2-3 Eggs scrambled in a bowl just with salt. Carbon steel pan, two table spoon of butter.
Butter needs to melt and to get golden brown. Hitting the right butter color is important, too bright and butter will taste just like molten butter, too dark and butter gets too much nutty aroma. Then I lower stove flame and put eggs in, stir slowly eggs until eggs bind with butter. When half of the eggs is hard I put the fire off, there is enough heat to get them hart trough but not too dry.
Fresh green onions or chives can be added as well.

Have you tried Bill Granger's scrambled eggs... drool... so good! Terribly unhealthy. You can thank me later.

      ----

Bill Granger's famous "bills" scrambled eggs are known for being incredibly creamy, soft, and lightly set, often described as a "folded" egg rather than a traditional scramble.

      Ingredients
      4 large organic eggs
6 tablespoons cream (or heavy cream/milk)
      1 tablespoon butter
      Salt (to taste)

      Instructions
Prep the Eggs: In a bowl, whisk together the 4 eggs, 6 tablespoons of cream, and a generous pinch of sea salt until just combined.
Heat the Pan: Heat a large non-stick frying pan over medium-low to medium-high heat (medium-low is recommended for a slower, more delicate cook).
Add Butter: Melt the butter until it is foaming but not browned.
Cook Slowly: Pour in the egg mixture and let it sit for about 20–30 seconds, or until it just starts to set around the edges.
Fold, Don't Stir: Using a spatula or wooden spoon, gently lift and fold the cooked eggs from the edges into the center.
Rest and Repeat: Allow the uncooked egg to flow to the edges. Let it sit for another 10–20 seconds, then repeat the folding process.
Finish: Remove the eggs from the heat while they are still slightly underdone and appear somewhat wet, as they will continue to cook on the plate.
Serve: Serve immediately on hot, buttered sourdough toast.
“When all the eggs are just set, spoon onto buttered toast and serve with a few spinach leaves.”

Funny you should mention that you like poached eggs. I love them.
In fact just today while I was window shopping online I saw an electric egg poacher and bought it. It's even pink 🩷 my favorite color.🙂

@sage2021 Yes my Gram showed me how. With an egg poacher it is easy. I can do it with a pan & some water if I pay attention.

  • Eggs are a delightful culinary playground! I adore them poached to perfection, with velvety yolks that gently cascade when pierced—a beautiful contrast to the tender whites. They remind me of a quaint brunch café in Kyoto, where the chef paired poached eggs with Japanese influences like miso-glazed vegetables and a hint of umami. It's an exquisite experience that brings balance and comfort with each bite. 🍳✨

Sunny side up in my ramen noodle soup, or fried easy with sliced avocado and toast on the side, or hard boiled and chopped up with my tuna fish or in a Cobb salad, or fried rice with onions and scallions. Poached egg is amazing.
