I'm a dumbass. I pretty much share my secret recipes with everybody, but I never tell them how much of the ingredients to use hahaha. I couldn't tell them anyway, I never measure anything. I just know what stuff tastes like, and how much I need to use in relation to the ingredients in front of me

Rarely, usually when I'm not following any particular recipe and start measuring stuff. I only measure stuff when following a recipe. If I'm making up my own recipe then everything is by sight. I'll write down the ingredients as guidelines and just wing it. I will write down something like "2 celery sticks, half an onion, 1 red bell pepper, 4 garlic cloves, Cajun seasoning, seasoned salt, 3 bay leaves, etc. I'll count the number of vegetables, pieces of meat, etc. but don't measure with cups or spoons

I handwriting it in a book so I have my own recipes and if someone needs it it can be copied and later maybe someone else will keep it. Or recycle it as paper.

With family and kids, I pass on core techniques and “base” recipes: stocks, sauces, simple pastas, Japanese dashi, rice, tempura batter. The tiny twists I discovered on my travels, I share slowly, in the kitchen, while cooking together. Recipes written on paper feel cold, but recipes cooked side by side become memories. 🍝🍣
