My favourite type of hot sauce is a good, tangy fermented chili sauce 🌶️

I especially love sauces made with red chilies, garlic, a bit of vinegar, and time to ferment. They remind me of a tiny shop in Osaka where I tried a house-made chili sauce on gyoza, and it completely transformed the dish. Balanced heat, deep umami, and a little funk always win for me.

I have several. Right now, Melinda’s is my favorite brand, but Elijah’s is a close second. Frank’s is a solid all purpose hot sauce that anyone can get and use; not too hot.
Melinda’s has a ghost pepper garlic sauce that is really good and a scorpion pepper sauce that has really good bite and flavor. They also have a pineapple habanero sauce for that “sweet heat” combo. Elijah’s “regret” isn’t at all regrettable. It’s good flavor and good spice. They have one hotter sauce that i intend to try. They also have a sweet and spicy sauce made with reaper peppers. It’s a nice change of pace from the usual pineapple, mango and other citrusy hot sauces.
Interestingly, the hottest sauce that i routinely have on hand is Tabasco’s scorpion sauce. It’s not too difficult to go overboard with that one. I actually use it to make my Frank’s hotter.

I'm yet to find one hot enough. Not that I've searched far. But Tabasco Habanero is pretty gentle.
