Guy I'm talking to takes a day to reply but always carries on the conversation. Is he interested or not?

He is a doctor so he is quite busy and has horrendous shifts so his sleep pattern is bad and he's always tired.

I told him I'd see him after lockdown which he said is fine, but he takes a day to reply, and this time he took a couple of days. He still asks me questions to carry on the conversation though.

Is he interested or not?

I think you answered your own question. He's busy. If he wasn't interested he wouldn't talk to you at all.
