How do you know so quickly that you like her so much.. and how do you express and show your fondness for her so early on?

I can usually tell on the first date if someone is relationship material. Just compliment her a lot and be very polite and attentive. Certainly we'd be in the kissing and hand holding stage by then. It's likely the relationship would have gone sexual and exclusive by then also.
