Oh my! I was having quite a bit of trouble with this sort of thing when I first went to college. I was rather (extremely) naive, and I was almost depressed by the fact that there is really only a handful of people who aren't crazy and party drunk all the time. I would say that in the real world, a responsible woman could easily be found at the workplace, since that is where they are most likely to act mature, and you might find some that meet your criteria.
However, this thought only brought me more stress. I am going into engineering, so the women:men ratio is very low. So it doesn't necessarily have to be your workplace. I don't really know how to answer this.
I now see that this answer is rather useless. I saw this question, was curious, and read it. I got excited because I have had the same exact problems/thoughts. I would delete this answer, since it doesn't really say anything. But, alas, I am too far in to turn back now.

Local coffee shops, book stores, music stores.
Volunteer for something like Habitat for Humanity, and it's the holidays so I'm sure there's lots of volunteering opportunities.
The library, find out when poetry/book discussions are coming up & attend some of those.
Any of these places give you plenty of opportunities to meet a cultured, sweet, genuinely good girl.
After all, I sound like the girl you described and I spend a lot of my time at the places I just mentioned.
Um, I'm one of those type of girls and I guess you could say we're everywhere. You can find us at the movies, the mall, work, school.anywhere you would approach women. Just not at the club or the bar ;) Maybe next time you are looking for girls to talk to, try the one that you don't notice at first. because if a girl is shy sometimes we get overlooked.
Hmm, you pretty much described me. After college, I was like "what now?" I'm at the tennis court, at my job, at church, doing errands, at the bookstore, at the gym, taking cooking classes, and volunteering.
