Every time I try to find a gift to buy for a man I struggle. What do these guys want? For us, it is stereotypically flowers but what about men?

Most guys prefer more practical things as a gift - something we can use. A sandwich, a plate of cookies, new socks, a T-shirt, a hat, etc. You may think of these as mundane, but we actually appreciate them! And they mean more to (most of) us than, say, flowers, which to us are pretty but impractical.
Most guys are NOT looking for anything expensive, so don't spend a lot of money on us, at least, not unless you've been in a relationship a good long time and he's spent real money on you. Most guys would be very uncomfortable receiving an expensive watch or a car or some of the other things mentioned here unless they were married, etc.
If he's a movie collector or a video gamer, then a Blu-Ray (or UHD Blu-Ray), or a video game might be nice. If he's a heavy tool user (even if just a hobby, like hot-rodding cars), then a tool is always welcome. If he collects something, you could get something for his collection.
But food is always welcome. A home-cooked dinner is hard to beat, especially for those guys who mostly eat frozen or fast-food. Or if you bake something - a cake, a pie, cookies, brownies, etc., most guys really appreciate those things.

@Jamie05rhs There are women who could give a man a brand new V12 Ferrari, with the pink slip in his name, and not ever notice the financial cost. Of course, that's not typical, but there ARE occasions where that could happen. But unless that couple built together from the beginning, most men wouldn't want to receive that gift.
Similarly, most men with more typical incomes wouldn't want the girlfriend to buy them a new Honda Accord or Toyota Tacoma (or whatever more realistic car) either. It might be different if they'd been married for a while, and he always bought HER the new vehicle and drove the old one himself, or something like that, but mostly, guys aren't looking for expensive gifts in whatever form.

Id personally be very happy with flowers , but also functional that I can use like a particular T- shirt , even a small thing for the kitchen , anything that shows some thought , even if its completely wrong..
For me and I think others , its more about the process of individual thought , and certainly not about expense. Its a very good question actually :) Thank you.
I've bought my former boyfriend a single rose and he was super excited over the gesture. If you know the guy better, maybe look for something tailored to his taste - I also went for his favorite candy (duh), one time I found a guitar pic with a print of his favorite band that wasn't expensive and another time I got him a new spoon lure for his fishing rod. So far, all successes.
Men should be providers. If I have to give a gift I’d probably get some socks lol or if I was really insecure maybe a watch but the last thing I wanna do is buy men things. Gross. Men should pamper ME.

One thing that instantly comes to mind is food. Yeah, I know, it's not as long-lasting as a bouquet, but the way to a man's heart is through his stomach, right? Imagine bringing him his favorite snack or even a simple homemade sandwich. It's casual but definitely leaves an impression. It shows you know what he likes and you care enough to feed him well.
Another idea is something hobby-related, but not too over-the-top. Let's say he's into gaming—you could get him a small piece of merchandise related to his favorite game. It could be as simple as a keychain or a set of collectible cards. It doesn't have to be expensive; it just has to show that you pay attention to his interests.
For something even simpler, how about a handwritten note? A little note slipped into his backpack or left on his desk can mean the world. It's an old-school gesture that still holds a lot of emotional weight. You can never go wrong with genuine words straight from the heart.
I've been given flowers many times and was always appreciative. Especially if they're potted and I can grow them (though make sure they aren't poisonous to pets if applicable). I happen to like roses and wildflowers a lot, and nobody that knows me is going to accuse me of not being "guyish" enough.

Some guys like liquor. Others may like food like baking or cheese. Clothing like a t-shirt is always nice. Something related to his hobby would be appreciated.
Depends on the guy. You have to figure out what he likes, what he dislikes, what he needs and what he doesn't need. Some guys like watches. Others like games, others like a tool box. It really depends on the guy.
