“Wife” is by far the bigger risk, so far. Though a few jurisdictions have awarded “palimony” to some women who lived with their male partners, and it’s actually quite common in the UK. In fact, the UK is codifying the rule in order to make the legal proceedings after a breakup faster and more efficient.
The US will almost certainly follow suit. That’s right, gents, she doesn’t even have to get a ring and a marriage license to take you to the cleaners anymore. Merely dating a woman is enough to guarantee half of your belongings and likely more to her, even when she cheats on you and/or abuses you.
We’re likely less than a generation from the “man tax”. Where men will have to pay into a coffer to support women and children that they’ve never even met, because too many smart, self respecting men are bowing out of a game clearly rigged against them. There might even be compulsory sperm extractions if the science doesn’t advance enough to allow any two people to create new life without the need for sperm and egg. They’re working on it.

If you are 16, wife is not with the realm of possibilities.

If you are young and not ready to settle down, girlfriend is better.

If you are recently divorced and ready to "see what's out there," girlfriend is better.

Monday through Friday, if you want to know that someone is at home, looking forward to your arrival, without any expectation of being entertained all night. . . get a wife. . . but make sure you get a good one. The restocking fee is quite exorbitant!

Girlfriend is better than a wife because for the most part you can get rid of a girlfriend without it costing you a fortune. However, there are some occasions when it is still going to cost you a lot because the girlfriend will make all sorts of accusations and involve the police and the courts and you may find yourself in the wrong end of that kind of stuff. Even if it's just a girlfriend. A wife is the worst of all because when the divorce happens, she will be entitled to half of your property and assets even if she didn't earn any of it as well as your children and it will cost you a fortune to resolve that situation. If you can't. The default decision is she gets everything. If you can somehow persuade the court to not give her literally everything you have. The bottom line here is that that sting single is the best thing you can do. If you need sex just pay for it and forget the romance stuff entirely. That romance stuff is just propaganda to get you involved in some very difficult situations.

More seriously shortly after marriage some wives decide they don't need to be nice anymore and never have to sex again.

Wife, because it's SUPPOSEDLY a much more stable and long-lasting relationship.
Girlfriend because, if something causes a break up, you just walk away clean with no major worries but, if you're married to her, you have to go through divorce and probably loose half of your stuff to her!!
