Because it gets them what they want. Most people don't understand how important intentions are. Like when I give a homeless person money I do it help them. Some people give a homeless person money to feel better about themselves, not help the homeless. Both ways the homeless person got money. My way my reward was selfless in doing the right thing; their reason was selfish. They learned selfishness decreased their value (they gave their money away). what i learned is selfLESSness increased my value. That's is my best explanation for why people overcommit, knowing they can't. They learned lying gets them what they want even when it hurts later.

The proper answer is the same reason that women overcommit/ make promises they know they can’t keep: it's sensational and romantic, and, surprise fuckers, when your're enjoying romance to the fullest your logic isn't fully connected to reality. In other words, you either don't know that you can't keep them, or say that not as a true promise but a poetic hyperbole of dedication to you.

They overcommit because they want to be seen as capable, dependable, or impressive in the moment.

It feels easier to promise than to admit limits.

But when reality shows up, the gap between their words and their capacity becomes obvious.

It’s not always manipulation, sometimes it’s insecurity, sometimes it’s impulsiveness, sometimes it’s wanting to make someone happy without thinking long term.

Why does anyone? To obtain something from another person. In your case, it´s probably sex. There´s a lesson here. Never try to exchange sex for commitment. Have sex because you want to have sex. Then you won´t feel played if the relationship ends soon after.
