Why don't fighters have their weigh in right before their fight?

I just don't understand the concept of fighting in a weight class that isn't your natural weight.

For example: You have a 155 lb UFC Lightweight coming into the fight at around 170 lbs, making him a Welterweight by UFC standards. So basically everyone isn't fighting at their actual and natural weight, making it rather disapointing to see weight classes when they really don't weigh what their supposed to.

If everyone fought in their natural weight, then there would be no need for cutting, which can sometimes be dangerous depending on how much weight they are over. It also gives a disadvantage to the natural 155 lb fighter when the guy you are fighting weighs 15 more pounds than you by the time they step in the ring.

So getting back to the question, instead of having the weigh in a day before the fight, why not have it right before? That way they are without a doubt on equal grounds when it comes to weight.
