It's a horrible diet.
First, forget the supplements. They are supplements, not substitutes. Even as supplements they are questionable.
You have no fruits or veggies. These should be a major part of your diet.
You are concentrating too much on protein. Protein is one of the easiest nutrients to get. You don't need much, but you do need it. With a veggie diet you need to pay attention to whole proteins. Ideally do that through your diet itself, not through supplements. Maybe add some humus to your diet, it's a good protein source.
Peanuts and other nuts and legumes are good, but you have almost nothing else in that diet. Peanuts can keep you alive, but you want more than just staying alive, you want to be healthy and thrive.
I would add some other types of fats/oils to your diet. The fats from peanuts is not enough, and not whole. Fats are similar to protein / amino acids. You want a variety, not just a single source.
With a veggie diet, pay more attention to B vitamins. They can be difficult to get without meat. Add some nutritional yeast for starters. Don't rely on the supplements but keep taking them for now. You really need those B vitamins, but don't overdose (which can happen with B).
Overall, you want a diet with much more variety than what you listed.
I would probably add some Fat Free Cottage Cheese, Please.

I just Now had some Fat Free Cottage Cheese over Rice and Peas, Apple Sauce on the Side. Later a cup of Grape Nut Flakes Cereal with Skim milk.

No it is not. Chips are bad for you. Supplements are much worse than naturally occurring vitamins. Protein shakes actually aren't the best. No synthetically made vitamins are good for you.
