Vegetarian Christmas dishes?

Ok so here is the the thing I will be having some people over for Christmas dinner that don't eat meat, So my question is what are some good dishes I can make for them since the rest of is will be having turkey

Purchase some giant gaudy carrot hats, and instruct each of the vegetarians to wear one for purposes of identification. Tell them you've arranged a special table just for them, and them bring them to a kiddie table about two feet off the ground. Tell them you've made a special main course in their honor that's a giant piece of tofu shaped like a turkey. Bring them each a large glass of pulverized pulp/liquid, and explain that you've blended all of the boring Thanksgiving vegetable items together for their added comfort. This should suitably humiliate them so they'll never return.

Eggplant dishes are good meat substitutes and have a festive color that accompanies the holidays. You can always add a little minced clams to it if you want to torture them with it afterward as a joke, or go strictly vegetarian with ground nuts, peppers, and cheese

Greens of some sort

Twice baked potatos

Mac'n'cheese

Vegan brownies are yummy, cheap, and go very far, plus you can add sprinkles based on the holiday and always keep it fresh :) enjoy

haha I'm a vegetarian, and my family always makes me pasta, because I mean really, who doesn't like pasta :)

Double up on the yams/sweet potatoes since they'll probably be making that their main course
