Instant Pot 4-Minute Artichoke Dip

Coming from an orchestra family our Thanksgivings are so big we have them catered wherever we are, this year it's at home in LA, but during Thanksgiving week we're all cooking different things, as well.

Today it's 4-minute artichoke dip in the Instant Pot, delicious. I thought you might enjoy trying it. I'll try to post what I make each day this week if I have time. Boyfriend has an away game tomorrow so it might be tight.

Instant Pot 4-Minute Artichoke Dip

Do it exactly this way. I have a 6-quart Instant Pot Pro Plus, but any Instant Pot or pressure cooker will do.

Ingredients

1 T. minced garlic, fresh or frozen or dried or powder

1/8 t. salt (we like Real Salt, you can also use Kosher salt or course sea salt)

½ t. onion powder (we have caramelized onions all over the place so I use that)

2 x 14 oz. canned artichoke hearts

1 t. Better Than Bouillon broth, chicken or vegetable, mixed into 1/2 cup of the liquid from the artichoke hearts

10 oz. FROZEN chopped spinach – must be frozen

8 oz. Philadelphia cream cheese (regular not low fat)

½ c. sour cream (regular not low fat)

½ c. mayonnaise (regular not low fat)

1 c. grated or shredded Parmesan cheese

Put items in the pot in this order:

Broth + salt + garlic + onion powder

Artichoke hearts

Frozen spinach

Put cream cheese + mayo + sour cream on top of all this

DON'T add the Parmesan cheese until after it's done

THEN

Pressure cook on high for 4 minutes. Let it natural release for 10 min., then quick release

Open the pot after the steam is released and the pin goes down. It will look awful but smell great

Mix

Add Parmesan cheese

Mix

If it’s too watery or soupy, add gradually add some panko and mix until it’s the thickness you want.

Put into a Corning dish and serve, or broil the top for a few minutes in the oven if you like it browned. Serve with Wheat Thins or Chicken in a Biscuit crackers or pita chips.

This is one of the few exceptions where you can cook dairy in the Instant Pot, but you must put it on top of the layers of artichoke hearts and frozen spinach so it doesn’t touch the bottom of the pot and burn. Do not use low fat versions of the dairy items or they will curdle
