Find a local artist and commission them to do a painting of you and your mother together doing something. So a lot of times you can give them photographs of you and your mom and they can go by that for reference so it can still be a surprise for her. Her favorite flowers and perfume are always a good option. How about the scent of Jasmine? If she's a coffee drinker buy her some coffee you can't buy in the stores. There's a brand called coffee brand coffee he mentioned he had some like blueberry or blackberry flavored coffee I'm actually wanting to try it and I'm not much of a coffee drinker. Maybe a nice necklace or earrings depending on her taste. Those are some ideas I can think of. Hope she likes whatever you decide to get and she has a happy birthday 🎂🎉🎈🥳

By guys do you actually mean girls because us guys are probably the worst group to ask what should you get for your mom's birthday. Since you are asking guys, I am guessing you want a suggestion that is way out the box.
That being said, what are your mom's interests? And is she single? And I am not asking because I want a date, but if she is single my suggestion would be to get her something she can not open in public and would probably be embarrassed if you discussed it with her. By now I think you know what I'm hinting at.
My wife got one for her grandma years after her husband had past away and you wouldn't believe the positive response she got. That thing was massive to, made me question what her GG was into when she was younger.

Possibly a large framed photo of you both. Flowers definitely, a soft blanket, a new bicycle if she's active, a book or perfume as others have mentioned, a nice smelling candle, or maybe a pet hamster! No that was a joke.
Another is possibly something you do together like take her to the movies if there's anything decent to see.
